Ingredients for making brinjal puree –
2 big eggplants –
2 medium size onion –
3 tomatoes –
250 g curd –
2 tsp red chilli powder –
1 tsp turmeric powder –
1 tsp coriander powder
– salt as per taste –
1/2 Cup oil –
2 tsp ginger garlic paste –
1 tsp garam masala

For garnishing –
Green chillies cut into pieces – Green
coriander chopped into pieces

How to make
Brinjal Bharta- To make brinjal bharta , first roast the brinjals on the flame. When the eggplant turns black or brown, peel it off and mash it. Now heat oil in a pan, add chopped onion and fry after adding ginger garlic paste in it. Add chopped tomatoes and cook until the oil separates. Add red chili, coriander powder, turmeric powder, garam masala and salt. Mix it well by adding curd to it. Now add mashed eggplant and stir it well for 5 minutes. Now garnish the bharat with green chillies, coriander and garam masala. You can serve it for lunch or dinner with roti or non.
